Fruited Quinoa Breakfast

At yesterday's class with Vicki, we made this amazingly delicious breakfast bowl. Full of protein, fiber and heart-healthy ingredients. 
You can add really anything to this bowl that you want, but we stuck with the basics. 
Makes 6 1/2 cup servings.

-1/2 cup dry quinoa, well-rinsed
-1 1/2 cups vanilla rice milk
-2 tablespoons raisins
-1 cup chopped fresh peaches
-1/4 teaspoon vanilla extract
-cinnamon to taste

How to:

Combine quinoa and rice milk in a medium saucepan. Bring to a slow simmer, then cover and cook for about 15 minutes until the quinoa is tender. Stir in raisins, peaches, vanilla and cinnamon. Serve warm or chilled. 

We were all such a fan of this dish we could eat it for breakfast, lunch or a sweet treat in the evening!
